Check the datasheet for the particular AVR chip you are using. Some modern MCUs have a high current source/sink (I seem to recall the PIC 2550 having a pin able to source/sink 50mA) pin that can be used to directly drive an LED, for example. It might be enough for the motor if its current requirements are low.

You are thinking about this backwards. What you are describing is a full-matrix mixer, in which each of the outputs can have a mix of any of the inputs. In other words, treat each output independently as an N-channel mixer, where N is the number of inputs. Then build as many mixers as you have outputs. You might need buffer amplifiers (unity gain, low output impedance) on the input channels in order to have adequate drive for all of those mixer inputs

Parallel motors on the same output
The only thing that will cause one motor to interfere with the other is the internal resistance of the power supply. When a motor starts or when the motor overloaded or stalled by too much load, it will draw more than the rated current. If that makes the supply voltage drop, the other motor will slow down. That can happen with PWM or any other type of control, but electronic control can limit overload current thus minimizing the effect. You should use a power supply that can put out at least two or three times sum of the rated currents of two motors.Without knowing the internal resistance of the motor, it is difficult to estimate the resistance value that you will need for the rheostat.
