While it may have been logical to think that Macs are better for gaming, the reality is that Macs are not so much optimised for gaming. The problem? MacOS itself. The hardware, including processors and graphics are quite similar to those on Windows computers, however MacOS just was not designed for gaming. Apple has advertised on their website that you can game with a MacBook Pro, however they mean this from hardware specs, they are not focusing on the software here. MacOS is more used for soft gaming, productivity and other usage. If you want to play games that are not too demanding, you should cope, however more demanding and harsh games like Fortnite should be played on Windows as the software is more suitable

Video editing can make great use of multi-core CPUs and GPU acceleration as well. Games still are not there yet. Most games will still default to using a single thread. Still, modern quads can keep up quite nicely in gaming and I would rather have the versatility of a quad than to limit myself just for the sake of a game.

I can reply to backup part of your question. I just finished evaluation of 4 backup solution for VMware for our business and here they are:These are only more or less mature solutions suitable for production use I could find. I personally liked Veeam (price/value wise) but if you require backing up to tape PHD may be a better fit. The last one is what we are ended up with, but it is NOT designed for tape backups so it may be of no value for you.Hope this helps

Like kinokijuf mentioned always check the manual to see what is supported: just because the CPU fits physically does not mean the laptop will recognize it. The BIOS/UEFI is the limiting factor, often you must upgrade your BIOS/UEFI to a specific version before a newer and physically identical CPU is supported.The reason the i7 works but you do not find it on the Intel site is that PPGA988 and FCPGA988 are almost identical. The number is the number of pins on the CPU. PGA means Pin Grid Array. This is often referred to as 'pin identical'

Better to get a host with more CPUs or less but more powerful

As Ewan already said. The question is if you can spread the workload over the different cores. If you can then more cores are better. This is under the assumption that you have a lot of concurrent requests. If you have only a few concurrent request but every requests will involve a lot of heavy computing then faster cores are better. What I would recommend you as well is to check the speed on the bus/backplane/motherboard (whatever you want to call it)
